Poultry Processor

Poultry processors slaughter, dress, cut, trim, prepare and pack poultry.

Poultry processors may perform the following tasks:

  • catch, cage and unload cages of live poultry
  • shackle and suspend live or slaughtered poultry for killing or processing
  • remove internal organs of poultry
  • trim excess fat, blood clots, bruises and any undesirable matter
  • separate meat from around the bones using hands or a knife
  • sort and stack poultry
  • cut whole birds into portions using a power-driven blade
  • pack dressed whole birds into bags, crates or cartons
  • handle ice to chill poultry
  • make up orders for delivery to customers
  • load boxes of processed poultry onto vehicles using a forklift
  • prepare poultry for cooking and further processing
  • record the amount of processing performed
  • clean and sanitise equipment and work areas.

As well as chickens, some processing companies specialise in turkeys, ducks, geese, quails or pheasants. While knives and power equipment are used generally, larger poultry processing plants usually have automated processing machinery.

Poultry processors work in a cool environment and may be required to stand for most of the day. Hands and clothes may become soiled with blood and feathers but health regulations ensure that poultry processors work under hygienic conditions. Shift work or early-morning starts may be required.
